It\u2019s believed that the cloistered nuns of Santa Catalina<\/strong> were the ones who created this frozen temptation<\/strong> which, despite its name, contains no cheese<\/strong> at all. Instead, it\u2019s made with fresh and condensed cow\u2019s milk, cinnamon, and other little secrets.<\/p>\n\n\n\n

You\u2019ll recognise the women who prepare it by their traditional dress and by the wooden barrel<\/strong> they use. Inside, there\u2019s ice<\/strong> and a metal container holding the famous queso helado<\/em><\/strong>.<\/p>\n\n\n\n

There may not be cocoa in Arequipa<\/strong>, but there\u2019s been excellent chocolate here since 1909, when Spanish immigrant Juan Vidaurr\u00e1zaga Menchaca opened La Ib\u00e9rica<\/strong> on San Jos\u00e9 and Jerusal\u00e9n streets in the Historic Centre.<\/p>\n\n\n\n

At first, La Ib\u00e9rica specialised in making hot chocolate bars<\/strong>. Later, it amazed customers with a variety of other treats: filled bonbons<\/strong>, toffees<\/em>, animal-shaped chocolates,<\/strong> marzipan and nougat.<\/p>\n\n\n\n
